I am appealing to the masses of the blogger world to assist me in a very important task:coming up with menus for single serve meals!
I've been single for several years, am not a very good cook, and am growing tired of the whole "mac&cheese" meals.
SO, if anyone who peruses this blog would happen to contribute meal ideas for single servings, I would greatly appreciate it!
And so will my children (as I would grow to be a better 'chef', they would benefit from my cullinary growth).

Depends on what you like to eat ray-ray. Answer a few questions for me and i can give you some great ideas(I have a certificate in Culinary Arts).
Do you like veggies?If so- what kinds will you NOT eat?

Silly Question- do you like meat- and if so what kind do you usually eat? Red meat- fowl, and fish.
Breads? yes or no.
Do you want meals you can make in 30 mins or less or something you can throw in a slow-cooker- and if you dont HAVE a slow cooker, I strongly suggest you invest the 20$ for one.
Thats it- I have a LONG list of thisngs i can send to ya- one or two a day on here.

Dude, I've got several easy recipes for you.
-Spaghetti
-Chicken Broccoli Alfredo
-Tacos
-Tater Tot Casserole
-Chicken Casserole
-Roast (yes, roast)
The list goes on and on and on...
The only issue here is that you've asked for single serving. Even I don't do that. I usually cook enough for two meals and have leftovers later in the week. You can freeze the leftovers and cook them later. My main recommendation is to NOT reheat stuff in the microwave, unless it's veggies. It just doesn't taste the same - especially meat.

Sunny~In the past, I have been known to be a picky eater. However, my tastes have expanded to just about every food possible with the exception of tomatoes.
I just can't do the sliced tomato.

Easy one for Ya Ray-ray...I'll send ya a new one every couple days.
I;m with Ozzy -make a whole recipe and then freeze the leftovers.
Chicken Rice Casserole
1 can cream of chicken soup
1 can water
1 cup uncooked dry rice(long cooking) OR
1 & 1/2 cups uncooked instant rice
1 cup mayo OR 1 cup Sour cream
Salt pepper garlic salt, orgeano and or Paprika.
(basicly you can use any blend of seasonings you like to suit your own taste.)
Total should be about two tablespoons of seasonings.
Mix all ingredients together except chicken.
Pour into casserole dish
Place chicken on top of mixture.
Cover with lid or foil. (If you dont have a lid or foil for a casserole dish- place a cookie sheet over the top of the dish to use as a lid)
Bake @ 325 for about an hour.
Serve with your choice of veggie.
Scampi Sketti
(you can use chicken OR shrimp for this recipe)
Spagetti-(cooked and drained).
Shrimp(de-veined and preferably with tails off)OR Chicken (cut into bite sized pieces)
1 stick butter or marg(NOT tub marg)
1 teasp pepper
1/2 teasp garlic salt
3 tablespoons Teriayki sauce(opt.)
Boil water and cook spagetti pasta. Set aside.
Melt butter in skillet on high heat.
Reduce heat to med-high.
Add Spices.
Stir.
Add Chicken OR Shrimp.
Add Teriyaki Sauce.
Cook on Med high heat til shrimp is pink OR Chicken is cooked thoroughly.
Either spoon over pasta OR add pasta to skillet and heat thru.
Serve with Broccoli or your choice of veggie & garlic toast or bread.
Can't go wrong with Grilled Cheese and Cream of Tomato Soup. Unless you spill the soup on your lap, of course.
